Cardamom contains valuable essential oils that have many positive properties. The essential oils are found in the seeds which are enclosed in a tough fibrous pod and are only released once the pod is broken open. Cardamom is described to have a sharpness similar to that of eucalyptus. The taste is generally classified as spicy-sweet. Cardamom is often used in making Christmas cookies and biscuits. Gingerbread and speculoos cookies are also flavoured with it. It is a popular spice to add to flavoured coffee. This versatile spice tastes delicious in a variety of dishes both sweet and savoury.
